結合倫理道德理論與餐旅業界的倫理個案，啟發學生透過熟悉的餐旅倫理事件，產生真實的感受，並能從東方的角度進行探討，激發學生們藉由開放式討論，對倫理事件有更清楚的認識。

1.啟發同學瞭解「專業倫理學」是一門與專業領域相當貼切的學問，它教我們如何在自己的專業領域裡安身立命，以活出生命的意義。
2.培養同學們正確的價值觀，獨立思考及判斷的能力，以利日後協助自己面對與處理「餐旅企業倫理」兩難之情境。
3.協助學生明瞭一位有良好專業道德素養的專業人員應具備之條件，作為自己日後在專業領域裡努力的指標。
